This recipe is mostly method and will work with whatever your favorite cut of ribs might be

  1. 2 - 3 lbs. Grassroots Farm Pork Ribs... Spareribs, back ribs, country style ribs, whatever you choose
  2. Barbeque Sauce (your favorite)
  3. 1 fresh lemon, thinly sliced
  4. 1 large yellow or red onion, thinly sliced in rings
  1. If you are preparing spareribs or back ribs, pull the tough membrane away from the inside curve of the ribs before proceeding with the rest of these directions. You might have to use the tip of a very sharp, small knife to lift the edge of the membrane, then pinch firmly and pull down and across the convex side of the slab.
  2. Draw 3 - 4 qts. of cold water in an 8 qt soup pot. No need to measure, just be sure the ribs are completely covered when you lower them in. Season the water with 1 1/2 t. salt, a large bay leaf, 8 - 10 peppercorns, and 1/4 c. of cider vinegar or lemon juice.
  3. Bring pot to a simmer and parcook the ribs for 20-30 minutes. Baby back and spareribs should get less time than country style cuts.
  4. Preheat over to 325 degrees.
  5. Remove ribs and place on a foil lined, rimmed cookie sheet. Place thinly sliced lemon and onion over the top of the meat. Seal in the foil and place in oven for 45 minutes - 1 hour. Remove cookie sheet and carefully open the foil top. Sauce ribs. Return to oven for 20 more minutes.
To Serve
  1. Cut baby back ribs or spare ribs into 1 or 2 bone pieces. Serve additional sauce on the side.
