Ingredients
  1. 1/2 lb. organic carrots, scrubbed and cut in 1" pieces
  2. 2 medium organic yellow onions, roughly chopped
  3. 1 small head of organic cabbage (about 2 lbs.), cored and cut in 8 wedges
  4. 8 garlic cloves, smashed
  5. 2 bay leaves
  6. 2 Grassroots Farm center cut grass-fed beef shanks
  7. Coarse sea salt
  8. Fresh coarse ground black pepper
  9. 1 15 oz. can canned whole organic tomatoes (we didn't make whole canned tomatoes this year at the farm so you're on you own with this ingredient)
  10. 1 c. organic chicken broth (beef broth is OK, too)
  11. 2 T. Bragg Aminos or organic soy sauce/tamari
Instructions
  1. Place onions and carrots on bottom of 5 qt. slow cooker. Lay cabbage wedges on top. Sprinkle the garlic cloves, bay leaves (whole) on top.
  2. Season the beef on all sides with the salt and pepper and lay the shanks on top. Optionally, you can increase flavor by browning the shanks in butter or olive oil after seasoning and then lay on top. Deglaze the pan with the broth, if you browned the meat. Then pour the broth and tomatoes, with juices, over the entire pot. Be sure the liquid in the pot covers the shanks. If not, add more broth or beer. Put on the lid and cook on Low 8 - 10 hours. Taste for seasonings and if salt is needed, use the Bragg Aminos or soy for salt plus more flavor boost. If you want to thicken the juices, stir 1 - 1 1/2 T. cornstarch into 1/2 c. water. Remove the meat and cover with foil to keep warm. Pour the juices into a sauce pan and bring to a boil, Pour the cornstarch/water mixture in and stir to thick the juices into a delicious gravy without lumps.
Notes
  1. Serve with a side of rice or grain pilaf and sautéed mushrooms. Spoon the juices over both.
